Difficult to choose just the one. Probably one of the City Watch ones or one of the Death books...Reaper Man maybe, or Feet of Clay.

I liked Night Watch, though it's quite a bit darker than most Discworld books (no pun intended) so it depends what you're in to. Hope you enjoy it!
